FRIED APPLE PIES, YUMMY!
First of all, I have a prayer request, two actually... One for my Mom, she's having a time breathing, anymore she has more bad days than good days.. It shows just looking at her too.. Today she was back on oxygen, and still having problems : { It is just really hard to see her like that, especially since Dad died from asbestos in his lungs and could not breathe) It is a scary thing, to have problems breathing! GOD BLESS!! The second request is for my brother J.W.he is now in a body brace, and looking definitely towards back surgery scheduled on March 31.. (he is in his 40's.) He is in a lot of pain and the brace adds to it, plus rubs on him here and there, which makes sore places. Back aches also are a painful thing..God bless him and everyone that has back problems. Mom also has a lot of pain in her back but they have told her that all they can do for her is give her meds to ease the pain, she's beyond having surgery.
We started out today watching a couple of the Love Come Softly movies, I like most Hallmark movies, they are usually good.. anyway I got a few loads of laundry done while watching them. Then we decided to run to town and get Gene a birthday gift, his 80th. birthday is tomorrow. So we went to Walmarts and got it, and took it over to Moms... (thankfully he liked it). My sister J was there and had supper in the oven, and insisted that we stay so I could help her make fried apple pies (that Mom had promised my brother J.W.) so she and I made actually 18 pies. It was nice to get to spend some time with her and her ex and her granddaughter, we don't see them often. Oh, and by the way supper was delicious... she had taken boneless chicken breast and cut them into strips, put them into a deep large baking pan and covered with a large jar of good spaghetti sauce and baked them until extremely tender and done. Then she put them over the egg noodles... (I had never used them before, I always had used penne).. But it was really good.
I will be making it from time to time, for sure! The pies turned out good too.. My Dad's Aunts,
Sarah and Nan, used to make the absolute best fried pies... (both have long since passed away)
so "I bet they have some delicious fried pies in heaven" : ] We'll see them again!
FRIED APPLE PIES
Ingredients
Oil, for frying
self rising flour, oil, and milk
1 quart cooked apples
1/4 cup sugar
2 tablespoons apple pie spice
combine 3 tablespoons cinnamon, 3 tablespoons sugar
Flour, for rolling
Confectioners' sugar or ice cream , for garnish, optional
Directions
Use the flour, oil and milk and make scratch biscuits roll out onto a floured board
Cut into sections so that when rolled out would be as big as the pies you want (remember they fold in half to make the top and bottom) sprinkle cinnamon/sugar mixture on the inside of the dough Pour the oil into a large skillet about 1/2-inch up the sides and heat to about 350 degrees F. Place 1+ 1/2 heaping tablespoon of drained cooked apples on a round leaving a 1/2-inch edge all around, fold the other half of the bread onto the apples and press around the edges to seal. Dip end of dinner fork in flour and press continuously around edge to insure a proper seal. Repeat with remaining dough and apples... Makes 6 to 8 pies depending on the size you make them. Place 3 or 4 of the pies in the preheated skillet. Fry for about 3 minutes per side or until golden brown. Transfer to paper towels to drain and sprinkle with cinnamon and sugar while still hot. Serve with ice cream or confectioners' sugar, if desired. Delicious hot with a good cup of coffee.
