DELICIOUS CHEESY BACON POTATOES
DELICIOUS!
NO, I DIDN'T GET THEIR RECIPE, AND IT MAY NOT BE QUITE THE SAME,
BUT THIS IS HOW WE DECIDED TO MAKE THEM, OUR OWN VERSION!
(AND THEY ARE GOOD, OR WE SURELY THOUGHT SO)
INGREDIENTS:
1 POUND OF BACON, FRIED CRISPY AND BROKEN UP
THEN ENOUGH POTATOES TO DICE FOR YOUR FAMILY (YOU'LL KNOW HOW MANY)
A MIXTURE OF SHREDDED CHEESE, WE USED CHEDDAR, SWISS & PEPPER JACK
I ALSO USED SOME FRESH CELERY DICED SMALL
1 SMALL ONION, DICED SMALL
AND TO GARNISH
1/2 OF THE BACON, SOME GREEN ONIONS DICED SMALL, AND SOME CELERY HEARTS AND LEAVES DICED RATHER SMALL..

FIRST I CUT AND FRIED THE BACON (DRAIN & DIVIDE IN HALF)
THEN IN A MIXTURE OF A LITTLE HOT BACON GREASE, AND HOT CANOLA OIL I QUICKLY FRIED AND BROWNED THE POTATOES FIRST, THEN I TURNED THE HEAT BACK AND ADDED IN THE, SMALL ONION, AND CELERY BITS AND COOKED THEM JUST UNTIL A LITTLE TENDER , THEN DRAIN GREASE OFF IN COLANDER
NEXT, ADD THE BACON AND CHEESE MIXTURE AND STIR WELL

PUT IN A SPRAYED CASSEROLE PAN
COVER WITH MORE CHEESE MIXTURE,
ADD THE FINELY CHOPPED GREEN ONIONS AND CELERY HEARTS AND LEAVES
(JUST ENOUGH TO GARNISH)
PLACE IN OVEN FOR A FEW MINUTES UNTIL ALL THE CHEESE IS MELTED
